Hailbut with Fresh Mango Salsa


Long time, no blog! This summer has been filled with fun and family, and hasn't left me much time for cooking or for blogging! After spending a week or so road tripping through the Yucatan, Shea's sister Kiley came to stay with us for about a month. We had a blast showing her lots of great food around DC, but I am happy to be back to our kitchen trying out new recipes.

This recipe is light, fresh, quick, and easy. Shea and I used to eat LOTS of mango salsa when we lived in Hawaii (we had a mango tree in our back yard), so I know that anything paired with mango salsa will be great. Like you probably already know, we don't have a grill so we cooked our halibut in the oven and it turned out great. We served ours with some red peppers sauteed in a cast iron skillet for a complete meal.


Grilled Halibut with Fresh Mango Salsa

Ingredients
  • 2 cups plum tomatoes, seeded and diced $
  • 1 1/2 cups diced peeled ripe mango $
  • 1/2 cup diced onion $
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice $
  • 1 tablespoon cider vinegar
  • 1 teaspoon sugar $
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • cloves garlic, minced
  • (6-ounce) halibut fillets
  • 1 tablespoon olive oil $

  1. Directions

  1. Combine first 7 ingredients. Stir in 1/2 teaspoon salt, 1/2 teaspoon pepper, and garlic.Rub halibut with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Place fish on grill rack; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with mango salsa.
